Ingredients
You probably have most of these!
- 2 cups (300g) plain flour
- 2 tbsp caster sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- 1⅓ cups (330ml) milk
- ¼ cup (60g) melted butter
- 1 tsp vanilla extract
Don't overmix the batter! A few lumps are okay and make for extra fluffy pancakes.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Mix Wet Ingredients
In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract.

Combine
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.

Cook
Heat a non-stick frypan over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes.

Serve warm with your favourite toppings. Maple syrup is always a good idea!
Make it your own
Chocolate Chip
Add 1/2 cup of chocolate chips to the batter.
Blueberry Bliss
Fold in 1 cup of fresh blueberries.
Banana Lovers
Add 1 mashed banana to the batter.
Nutty
Top with chopped nuts for extra crunch.
